Materials
1) 1kg animal cream, 35% animal fat
2) 1kg full fat milk
3) 400 gr date juice
4) 400 gr egg yolk
5) 100gr gelatin (if powdered, 100gr powdered gelatin + 500gr water)
6) 2.800gr Fibre-Free Date Puree (67 Brix) Dates
7) 2,800gr whipped cream, 35% animal fat
How to make
Boil the milk and cream. Pour over the beaten egg yolk and date juice. Put the mixture back on the stove and bring it to 82-84 degrees on low heat.
Remove from heat immediately and strain through a wire strainer. Add gelatin, then add date puree. When the temperature drops to 30-32 degrees, add whipped cream.
